Martha Stewart has proclaimed the first week of April "Cupcake Week" and each day will feature Martha's favorite cupcakes and bakeries around the country.

I was not surprised to see my neighborhood cupcake shop "Happy Cakes" selected as one of Martha's favorites! I have visited this wonderful shop, chatted with the bakers and have sampled many of their delicious, mouthwatering cupcakes. It seems like cupcakes are the hot new foodie item, even Madonna gabbed about cupcakes on a recent radio interview.

Happy Cakes Bakeshop is located in Denver's Highlands Square neighborhood (West 32nd Avenue, Denver, 80211) and is run by Laura Reynolds, Lisa Herman, and Sara Bencomo. Happy Cakes prides itself in being Denver's original gourmet cupcake bakery and offers a variety of seasonal and holiday-inspired cupcakes. The owners' sense of whimsy, tastiness and elegance is apparent in their menu offerings.

Martha's favorite treat from Happy Cakes is the cosmo, a Vodka-soaked cranberry cupcake with lime-infused buttercream. Now if that isn't a wonderful treat to get any Friday afternoon started, I don't know what else is!!! It is the lead up to a great cocktail which can also be found at many of the local restaurants and bars in this great gourmet-foodie neighborhood.
